Some types of snails are being cultivated in industrial scales. Helix pomatia is the leading one, since the conditions for their cultivation are the most approached to our climatic conditions. There are other types, which are being cultivated as well.
Helix Aspersa Maxima or Big grape snail. They are terrestrial mollusks belonging to the species of snails. Speaking about their taste characteristics, they are not worse, compared to grapes, but even better, as some experts state.
The external difference between this type of grape and grey mollusks:
- The weight of an adult gray snail reaches 25 grams, while pomatia can weigh up to 50 grams;
- Shell diameter reaches 40 mm, and 55 mm in the grape;
- Their body color is also different. Maxima has a grey body and stripes on the shell, while the grape snail has a beige shell without stripes;
- Taste characteristics differ by the habitat. If the snail eats ordinary grass, then its taste will be grassier.

They began to grow these mollusks a couple of centuries ago, when their beneficial properties have been recalled. The regions of France were the first territories, where snails were actively cultivated. They were fed with aromatic grass, so their meat was enriched with specific taste parameters. In the process of evolution, the area of existence of these snails has grown and spread to many countries. Temperature and climatic conditions for the maintenance and breeding of such pets are close to the conditions of our latitudes. Therefore, there are several ways to cultivate Muller and Maxima:
Since these species are congeners of grape clam, the conditions of detention are similar. They like warmth, moderate humidity, and they sensitive to the sun. They were brought from Africa, therefore they are quite thermophilic, but they adapted to the warm climatic conditions of our latitudes in the process of adaptation. Under natural conditions, Helix Aspersa can be found on the Mediterranean continents with a warm climate.
Their breeding is profitable from a commercial point of view, since they are ready to breed as soon as they are 6 months. In this period they reach the most appropriate size for sale and consumption. The number of eggs laid by these snails significantly exceeds the grape ones: 80 to 180 pieces compared to 50-80.
The demand for such goods is also significant. in the conditions of the enclosure, breeding of helix requires protection of the territory from the penetration of predators, equipment with wooden pallets and food. The optimum temperature for breeding is 23-25 degrees Celsius. In cold seasons, the snails fall into hibernation. Therefore, successful breeding requires the second option, i.e. greenhouse.
It constantly maintains a comfortable temperature, humidity, protection from sun exposure and pests, as well as cleanliness and abundant feeding. For breeding of offspring or spawn, an isolation method is used. That is, several pairs of individuals are combined in one box for reproduction. As soon as the roe is laid, it is transferred to an incubator or sent to pickling.
Many manufacturers build special premises on the territory of such farms in which chefs work, creating a finished product from snail meat. The cost of this product is higher than the cost of live mollusks. They deliver these products immediately to stores or restaurants.
